Restoring via iTunes sometimes might be problematic, and if you do encounter difficulties restoring from your backup or you simply want to extract only one piece of data and not to restore to the full backup then you certainly must look at the iPhone Backup Extractor if not already discovered:).
However, if you use iTunes, don’t you need to restore your iPhone to factory settings in order to ever restore your backed-up contacts?
I am using a third-party program called CopyTrans Contacts to backup my iPhone contacts on a regular basis directly to my computer.
Alice I used the same tool to export my old iPhone contacts and restore them to my new iPhone – found out about it here:

You are right that iTunes will restore your iPhone and delete its multimedia data during restore; as a result, I have been using copytrans Contacts to do the contact backup and transfer instead.
Well I have an unlocked 3g 6 years old and managed to navigate through this set-up and add to my new iPhone 4s. I am amazed at how I got there and amazed that all data was transfered, even my alarm clock settings and screen saver!!
I recently jailbroke my iphone 4 before I did that. To back up my contacts I got the answer from the afterdawn forums:
